However, with pork, you have to heed this cooking advice: Take the pork off of the grill or out of the oven (or whatever cooking medium you are using) when it is 5 to 10 degrees cooler than the optimal temperature. This is because the internal part of the pork will continue to cook even after you stop the heat.
Another quick note: This 145 degrees applies to pork chops and other whole pieces of pork like pork shank. Any type of ground pork needs to be cooked to at least 160 degrees Fahrenheit to be at the optimal temperature and safe to eat.
